About The Role Based at Mandarin Oriental Cristallo, Cortina , the Food &
- Beverage Manager plays a key role in the successful pre-opening and ongoing operation of the resort's Food &
- Beverage division. The Food &
- Beverage Manager supports the leadership and day-to-day management of all Food &
- Beverage operations, ensuring exceptional guest experiences, operational excellence and strong financial performance across the resort's restaurants, bars, in-room dining and events operations.
During the pre-opening phase, the role will contribute to the establishment of all Food & Beverage operations, recruitment and development of the team, implementation of Mandarin Oriental service standards and procedures, and the overall operational readiness of the division for a successful resort opening.
As a Food & Beverage Manager, you will be responsible for the following duties:
Pre-Opening Responsibilities
- Support the planning and execution of all departmental pre-opening activities.
- Support the setup and operational readiness of restaurants, bars, in-room dining and events operations prior to opening.
- Assist in recruiting, onboarding, training and developing the Food & Beverage team in accordance with Mandarin Oriental standards.
- Implement departmental policies, Standard Operating Procedures, service sequences and luxury service standards.
- Support the development and implementation of outlet concepts, menus,
beverage programmes and guest experiences in collaboration with Culinary and the relevant outlet leaders.
- Coordinate the preparation of operating equipment, supplies, inventories and other departmental opening requirements.
- Participate in tastings, training programmes, mock services and operational trials to ensure opening readiness.
- Collaborate closely with Culinary, Stewarding, Purchasing, Finance, People & Culture, Engineering and IT throughout the pre-opening phase.
- Support the establishment of departmental reporting, cost control, scheduling and performance management processes.
Operational Responsibilities
- Oversee the daily operation of all Food & Beverage outlets, ensuring consistency, efficiency and exceptional service.
- Maintain a strong operational presence across the outlets and ensure Mandarin Oriental service standards are consistently delivered.
- Lead, motivate, coach and develop Food & Beverage managers, supervisors and colleagues, fostering a culture of excellence, teamwork and accountability.
- Ensure guests receive highly personalised, intuitive and engaging service throughout their dining experience.
- Monitor guest satisfaction and feedback, proactively addressing service issues and identifying opportunities to exceed guest expectations.
- Work closely with the Executive Chef and culinary leadership team to ensure seamless coordination between front-of-house and kitchen operations.
- Support outlet managers in maintaining effective staffing levels, scheduling and colleague productivity according to business requirements.
- Monitor revenues, payroll, operating expenses and departmental productivity in line with budget and forecast objectives.
- Identify and implement revenue-generating opportunities through upselling, promotions, events and enhanced guest experiences.
- Support the preparation of departmental budgets, forecasts, operational reports and performance analysis.
- Monitor Food & Beverage costs and support initiatives to improve profitability without compromising quality or guest experience.
- Ensure compliance with food safety, hygiene, licensing,
health & safety and all applicable local regulations.
- Ensure departmental operating equipment, furniture and assets are properly maintained and controlled.
- Coordinate closely with Rooms, Sales & Marketing, Events, Spa and other departments to deliver seamless resort-wide guest experiences.
- Support the planning and execution of VIP experiences, private events, special promotions and high-profile functions.
- Ensure action points arising from daily briefings, operational meetings and guest feedback are implemented effectively.
- Ensure continuity of leadership and smooth operations across the Food & Beverage division when required.
- Perform any other reasonable duties consistent with the responsibilities and operational requirements of the role.
Requirements
- Degree or diploma in Hospitality Management, Food & Beverage Management or a related discipline is preferred.
- Minimum 5 years' experience in Food & Beverage operations, including previous management experience within a luxury five-star hotel, resort or internationally recognised hospitality environment.
- Previous experience as a Food & Beverage Manager, Assistant Food & Beverage Manager or in a comparable operational leadership position is highly desirable.
- Previous luxury hotel pre-opening experience is considered a strong advantage.
- Strong operational knowledge of restaurants, bars, in-room dining and events or banqueting operations.
- Excellent understanding of luxury service standards and the ability to translate them into memorable guest experiences.
- Strong leadership, coaching and people development skills with experience managing multicultural teams.
- Solid financial acumen with experience in budgeting, forecasting, payroll management, cost control and revenue optimisation.
- Good understanding of food safety, hygiene, HACCP and applicable regulatory requirements.
- Excellent organisational and problem-solving skills with the ability to manage multiple operational priorities.
- Strong attention to detail and ability to perform effectively in a fast-paced luxury hospitality environment.
- Excellent interpersonal and communication skills.
- Passion for Food & Beverage, innovation and delivering exceptional guest experiences.
- Fluent English and Italian; additional languages are considered an advantage.
