Apply to do research at the University of Gastronomic Sciences of Pollenzo! The research grant holder will work on the international project "CULTSENSE FOOD - Exploring global food perception: Cross-cultural insights in sensory description and preference", under the scientific supervision of Prof. Luisa Torri at the Sensory, Behavior and Cognition Lab of UNISG.

? About the Project

CULTSENSE-FOOD aims to develop and implement a standardized sensory methodology to enrich the global food composition platform of the Periodic Table of Food Initiative (PTFI, https://foodperiodictable.org/). The project focuses on gathering harmonized cross-cultural data on sensory and hedonic perception,



collaborating actively with international laboratories across two non-European continents.

? Key Responsibilities

Design & Manage sensory tests with trained panels and consumers.

Train Sensory assessors and manage ethical aspects of evaluation.

Analyze and manage both sensory and instrumental data (statistical analysis).

Coordinate relationships with project funders and international partners.

Draft technical-scientific reports and disseminate research findings.

? Key Requirements

Background and expertise in sensory science and food technology.

Excellent command of the English language (to be verified during the interview).
