A hotel under construction with a focus of design and sustainability, that will offer 80 guests rooms, a lively enoteca serving local wines and small Tuscan dishes, a library and amenities including fitness, art space and a lush inner courtyard.

/p h3The role /h3 pAs FB Manager, you'll lead the entire food beverage operation of The Usual Florence.
From breakfast and our enoteca to aperitivo and small Tuscan dishes, you'll ensure every guest experiences warm hospitality, outstanding quality and a taste of Florence.
You'll be one of the faces of our FB experience, together with your team.
You are naturally present on the floor, build relationships with guests and regulars and create the warm, informal atmosphere that makes people want to come back.
This is a hands?on operational management role that requires a blend of pre-opening setup and daily on-the-floor presence.
You'll play a key role in bringing our FB concept to life, developing seamless operational workflows and translating it into a strong and consistent day-to-day operation.
You will establish strong relationships with local suppliers and create an environment where colleagues feel empowered to take ownership and guests feel welcome to stay a little longer.
Working closely with the Hotel Manager and the FB team, you'll continuously look for opportunities to improve quality, efficiency and profitability while staying true to our commitment to sustainability and conscious hospitality.
Together, you ensure that the lean kitchen stays efficient without compromising on the quality or variety of the menu.




bAmong other things, you will: /b /p ul liLead the day-to-day operation of all food beverage outlets, actively working service during peak times to ensure seamless flow and high execution standards.
/li liDrive pre-opening FB operational readiness, including assisting on OSE procurement, POS system setup, inventory flow design, and menu engineering taking our non-traditional kitchen in mind.
/li liCoach and inspire the FB team, creating an engaging culture where people can grow and succeed.
/li liDevelop efficient roster schedules, organise daily operations and ensure appropriate staffing levels aligned with seasonal demand and target labour cost percentages.
/li liWork closely with the Junior Chef to deliver a food offering that celebrates seasonal ingredients, local suppliers and Tuscan flavours while minimizing food waste through conscious kitchen practices.
Our kitchen is build differently, with a small kitchen, lean team and compact menu.
/li liBuild strong partnerships with neighbourhood producers, artisans and wine suppliers.
/li liManage vendor deliveries, receiving procedures and storage logistics.
/li liMonitor guest feedback and use insights to continuously improve the guest experience and refine operational processes.
/li liEnsure compliance with HACCP, food safety and health safety standards.
/li liTake ownership of departmental budgets, labour costs, purchasing, inventory management, and monthly stock-taking.
/li liActively think along on how to increase profitability at breakfast, aperitivo, dinner, wine events.
/li liAnalyse sales performance, identify commercial opportunities and optimize pricing and menu to drive revenue.
/li liCoordinate cross-functionality with Front Desk and Housekeeping to manage breakfast flow, room amenities, room service, and seamless guest touchpoints.
/li liHelp organise events, community activations, courtyard pop-ups, and collaborations that strengthen The Usual's connection with Florence.
/li /ul h3What you'll bring to the table /h3 pYou are a natural host who enjoys creating memorable experiences through food, drinks and genuine hospitality.
Wine is something you have a genuine interest in and you enjoy making it approachable and part of the overall guest experience.
Combining operational excellence with commercial thinking, you know how to run a lean operation and create simple, efficient ways of working without compromising on quality or hospitality.
Building strong relationships comes naturally to you, whether with colleagues, guests or local suppliers.
Creating a strong and engaged FB team is equally important:



recruiting the right people, coaching and motivating them, and building a culture of ownership, genuine hospitality and high standards from day one.
Comfortable making decisions and always looking for ways to improve, you understand that great guest experiences start with an engaged team.
In addition, the following requirements apply: /p ul liSeveral years of leadership experience within food beverage, preferably in hotels or lifestyle hospitality, or dynamic high-volume venues.
/li liDemonstrated track record in hands-on operational leadership, service management, and floor coordination.
/li liExperience managing restaurant and bar operations, including POS systems, inventory management software, and scheduling tools.
/li liPre-opening experience or involvement in setting up new FB outlets is a plus.
/li liStrong coaching, recruitment, and people management skills.
/li liCommercial awareness and experience managing budgets, labour costs, COS, and purchasing.
/li liPassion for food, wine and creating authentic guest experiences.
/li liExperience working with small, local suppliers and seasonal products is highly valued.
/li liKnowledge of HACCP and food safety regulations.
/li liStrong organisational and communication skills.
/li liAbility to remain calm, adapt quickly and make sound decisions in a dynamic, fast-paced environment.
/li liFluency in English and Italian are essential.
/li liFlexibility to work dynamic shift patterns, including mornings, evenings, weekends and public holidays.
/li liA genuine passion for sustainability and conscious hospitality.
/li liYou are legally allowed to work in Italy.
