Hotel Sorrento is looking for an experienced Bars Operations Manager to take the lead and oversee some of the Mornington Peninsula's most iconic bars: Salt, Front Bar, Rooftop, Shi Hui Shi Bar, Pool Bar, Lounge Bar and our new Lobby Bar.
This senior, hands-on role will work alongside the Beverage Manager and lead the Bar management team and is accountable for the department's operational and financial performance, workforce, guest experience and service standards.

What you'll do:
From busy summer trading and major events to the ever-changing demands of the business,, you'll ensure we have theright people, resources and plans in placeto deliver consistently.
Lead, inspire and develop the Bar management team.
Take ownership of departmental performance, budgets and KPIs.
Plan staffing, rosters and management coverage around trade and business needs.
Drive revenue, productivity and profitability across all venues.
Oversee recruitment, training, performance and team development.
Maintain exceptional service, presentation and guest experience standards.
Lead operations during busy periods, events and complex trading environments.
Work with security providers to manage venue capacity, entry, queues and patron behaviour.
Ensure incidents are managed, documented and followed through appropriately.
Maintain strong stock control,



cellar standards and wastage management.
Ensure all venues, equipment and storage areas are maintained to a high standard.
Maintain compliance with Victorian liquor licensing, wagering, RSA, safety and hotel requirements.
What we're looking for:
Aconfident, hands-on hospitality leaderwho enjoys being on the floor, developing people and making things happen.
Senior management experience within a high-volume multi outlet bars, hotel or hospitality operation.
Experience leading managers and large teams.
Strong workforce planning and labour management skills.
Commercial understanding and experience managing budgets and KPIs.
The ability to stay calm and make good decisions under pressure.
Strong organisational and problem-solving skills.
A genuine passion for hospitality and creating memorable guest experiences.
A leadership style that is visible, accountable and focused on developing others.
