ppHotel Sorrento is looking for an experienced Bars Operations Manager to take the lead and oversee some of the Mornington Peninsula's most iconic bars: Salt, Front Bar, Rooftop, Shi Hui Shi Bar, Pool Bar, Lounge Bar and our new Lobby Bar.
/ppThis senior, hands-on role will work alongside the Beverage Manager and lead the Bar management team and is accountable for the department's operational and financial performance, workforce, guest experience and service standards.

/liliTake ownership of departmental performance, budgets and KPIs.
/liliPlan staffing, rosters and management coverage around trade and business needs.
/liliDrive revenue, productivity and profitability across all venues.
/liliOversee recruitment, training, performance and team development.
/liliMaintain exceptional service, presentation and guest experience standards.
/liliLead operations during busy periods, events and complex trading environments.
/liliWork with security providers to manage venue capacity, entry, queues and patron behaviour.
/liliEnsure incidents are managed, documented and followed through appropriately.
/liliMaintain strong stock control,



cellar standards and wastage management.
/liliEnsure all venues, equipment and storage areas are maintained to a high standard.
/liliMaintain compliance with Victorian liquor licensing, wagering, RSA, safety and hotel requirements.
