Offer Description Research activity focuses on the development and application of integrated multi-omics approaches for the characterization, quality control, and valorization of food products. The main research areas include volatilomics using GC-MS and comprehensive two-dimensional GCxGC-MS, sensomics through gas chromatography-olfactometry (GC-O) and Aroma Extract Dilution Analysis (AEDA), metabolomics using LC-MS platforms, and data integration through chemometric methods and machine learning tools.



The primary objective is to identify chemical and sensory markers associated with aroma quality, authenticity, processing conditions, and shelf life, enabling the definition of objective quality indicators and the development of predictive models and decision-support systems for industrial food quality control.
Mandatory requirement for admission to the selection: italian Laurea Magistrale, or Laurea a Ciclo Unico, or an equivalent degree from foreign Universities, obtained no more than 6 years prior to the application deadline (i.e obtained after 13/10/2020).
