General Manager - Hotel Sorrento

Held by the same family for three generations, Hotel Sorrento is one of the Mornington Peninsula's most iconic hospitality destinations. Following a major redevelopment, the property continues to be recognised as one of Victoria's leading multi-venue hotels, and is now seeking an experienced General Manager to lead it into its next chapter.

This is a genuinely diverse property to run: premium accommodation sits alongside seven distinct food and beverage venues, giving the successful candidate a broad and varied commercial mandate. Trade builds to an extremely high tempo over the summer peak, when the Peninsula's seasonal visitor numbers surge, making this a fast-paced, high-volume operation for several months of the year alongside a steadier shoulder and winter season.

The role carries full P&L; accountability across accommodation and all seven food and beverage venues, with genuine autonomy and close day-to-day partnership with ownership.

The Role

- Full operational and commercial leadership across premium accommodation and all seven F&B; outlets

- Driving revenue, profitability, and performance across a diverse, multi-venue business





- Managing the operational intensity of an extremely busy summer peak trading season, while maintaining service standards and team wellbeing year-round

- Leading the business through its next phase of growth following a significant recent investment

- Working alongside an established, experienced on-site management team

- Day-to-day partnership with ownership on strategic and commercial decisions

- Championing a values-led culture centred on family, honesty, community, and wellbeing

About You

-

- Proven experience as a General Manager or senior multi-site hospitality leader

- Strong multi-venue food and beverage leadership background, ideally including premium accommodation

- Experience operating in high-volume, seasonally driven environments, comfortable leading a team through an intense peak period

- Genuine commercial acumen with a track record xlwpduy of driving performance

- Comfort operating within a privately owned business with close ownership involvement

- A values-led, hands-on leadership style

- Openness to relocating to coastal Victoria

This role would also suit candidates without direct hotel experience who bring strong multi-site or group operations leadership across high-volume trade.
