Located in the picturesque coastal town of Sorrento on the Mornington Peninsula, we are renowned for serving authentic Indian cuisine prepared using traditional cooking techniques and fresh, high-quality ingredients. /p pOperating seven days a week, The Rasoi Sorrento offers both dine-in and takeaway services, catering to a diverse mix of local residents and visitors. Our menu features a wide range of rich, flavorful Indian dishes, and we pride ourselves on consistency, quality, and warm customer service in a fast-paced yet friendly environment. This is an excellent opportunity for a qualified and passionate culinary professional with proven experience in Indian cuisine and strong kitchen leadership skills to join a committed team and play a key role in the continued success of a popular hospitality venue. /p h3Key Responsibilities /h3 ul liPrepare and cook a variety of Indian dishes, including curries, tandoori dishes, seafood, chicken, lamb, beef, vegetarian dishes, biryani and Indian breads. /li liSelect, measure and prepare ingredients in accordance with established recipes and kitchen standards. /li liMarinate, season and prepare meat, seafood, vegetables and other ingredients using appropriate preparation techniques. /li liOperate and regulate ovens, tandoors, grills, fryers and other cooking equipment to achieve required cooking temperatures. /li liCook food using appropriate methods, including tandoor cooking, grilling, frying, baking, simmering and steaming.



/li liMonitor food during cooking to ensure appropriate taste, texture, quality and consistency. /li liPortion and plate meals according to established recipes, presentation standards and serving requirements. /li liPrepare food to accommodate special dietary requirements, food allergies and customer requests where required. /li liCheck the quality and freshness of ingredients and ensure food is stored appropriately under temperature-controlled conditions. /li liMaintain cleanliness and hygiene of food preparation areas, cooking equipment, utensils and workstations in accordance with food safety requirements. /li liAssist with stock rotation, checking supplies and preparing ingredients required for daily kitchen operations. /li liWork collaboratively with the Chef and kitchen team to ensure food is prepared and served efficiently during busy service periods. /li liAssist in guiding junior kitchen staff in food preparation, cooking procedures and maintaining kitchen hygiene standards. /li /ul h3To be Successful in this Role, You Will Have /h3 ul liHold a Certificate III or Certificate IV , or an equivalent recognised qualification. /li liHave at least one year of relevant experience as a Cook in a commercial restaurant or professional kitchen environment. /li liDemonstrated experience in preparing authentic Indian cuisine, including curries, tandoori dishes, biryani, breads and vegetarian dishes. /li liDemonstrated knowledge of Indian spices, ingredients, marinades and traditional cooking methods, including tandoor cooking. /li liSound understanding of food safety, hygiene and safe food handling requirements, with the ability to maintain consistent food quality and presentation. /li liAbility to work efficiently and collaboratively in a fast-paced kitchen, prioritising multiple food preparation and cooking tasks during busy service periods. /li /ul pJoin The Rasoi Sorrento, where tradition, taste, and teamwork come together to create memorable dining experiences.
